Ingredients
– 1 tablespoon olive oil
– 500 g Italian sausage
– 1 onion, chopped
– 2 garlic cloves, minced
– 1.5 liters chicken broth
– 2 medium potatoes, diced
– 200 ml heavy cream
– 2 cups kale, chopped
– Salt and pepper to taste
– Grated parmesan cheese for serving
Method
1. Heat the olive oil in a large pot over medium heat.
2. Add the sausage, breaking it apart as it cooks until browned.
3. Stir in the onion and garlic, cooking until softened.
4. Pour in the chicken broth and add the potatoes. Simmer for around 15 minutes until potatoes are tender.
5. Mix in the cream and kale. Cook for another 5 minutes, seasoning with salt and pepper before serving.
