Ingredients
- 500g mixed vegetables (carrots, zucchini, broccoli)
- 1 onion, chopped
- 2 cloves garlic, minced
- 300ml vegetable broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 cups shredded cheese
- 1 cup breadcrumbs
- 1 egg
- Salt and pepper to taste
Method
1. Preheat the oven to 180 degrees Celsius. Grease a baking dish with a little oil.
2. In a large pan, sauté chopped onion and minced garlic until softened. Add mixed vegetables and cook for about 5 minutes.
3. Pour in the vegetable broth. Stir in oregano, thyme, salt, and pepper. Cook until the broth reduces slightly.
4. In a separate bowl, mix breadcrumbs, egg, and half of the cheese. Combine this mixture with the vegetable mixture in the pan.
5. Transfer the mixture to the baking dish. Sprinkle the remaining cheese on top and bake for 25 to 30 minutes until the cheese is bubbly and golden brown.
