Ingredients
– 2 cups quinoa
– 4 cups water
– 1 tablespoon olive oil
– 1 teaspoon salt
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1 red bell pepper, diced
– 1/2 cup parsley, chopped
– 1 lemon, juiced
– Pepper to taste
Method
1. Rinse the quinoa under cold water in a fine-mesh strainer.
2. Combine quinoa, water, olive oil, and salt in a pot. Bring to a boil.
3. Reduce heat, cover, and let it simmer for about 15 minutes. Fluff with a fork once it’s done.
4. In a large bowl, mix the cherry tomatoes, cucumber, red bell pepper, and parsley.
5. Add the quinoa, lemon juice, and pepper to the bowl. Stir to combine and serve.
