Ingredients
– 1 cup beetroot, cooked and diced

Method
1. Preheat your oven to 200 degrees Celsius. Arrange the baguette slices on a baking tray.
2. In a bowl, mix the beetroot, cheddar cheese, olive oil, lemon juice, garlic, rosemary, salt, and pepper.
3. Spread this mixture onto each baguette slice. Bake for about 10 minutes until golden and crispy.
4. While the crostini is baking, slice the avocado and season it with salt, pepper, and chili flakes if desired.
5. Top each crostini with a slice of avocado and serve immediately.
