Delicious Kathirikai Urulaikizhanghu Pachidi: Brinjals And Potatoes Recipe

Ingredients

– 1 cup moong dal (split yellow lentils)
– 2 medium brinjals (eggplants)
– 2 medium potatoes
– 2 tablespoons oil
– 1 teaspoon mustard seeds
– 1 teaspoon urad dal (split black gram)
– 1 teaspoon cumin seeds
– 1 teaspoon turmeric powder
– Salt to taste
– 2 green chilies (slit)

Method

1. Wash the moong dal thoroughly under running water. Soak it in water for 30 minutes.
2. Cut the brinjals and potatoes into small cubes.
3. Heat oil in a large pan over medium heat. Add mustard seeds, and let them splutter.
4. Mix in urad dal, cumin seeds, green chilies, and turmeric powder. Stir for a minute.
5. Add the brinjals, potatoes, soaked dal, and salt. Pour in enough water to cover the ingredients. Cook until soft.
