Ingredients
– 1 kg beef chuck roast
– 1 cup beef broth
– 1 cup sliced carrots
– 1 cup chopped onions
– 2 cloves garlic, minced
– 1 tablespoon tomato paste
– 1 teaspoon dried thyme
– 1 teaspoon salt
– 1 teaspoon black pepper
– 2 tablespoons olive oil
Method
1. Preheat your oven to 150°C.
2. Heat olive oil in a large pot over medium heat. Brown the beef roast on all sides.
3. Remove the beef and add onions and garlic to the pot. Sauté until they are soft.
4. Stir in tomato paste, carrots, beef broth, thyme, salt, and pepper. Place the beef back into the pot.
5. Cover the pot and transfer it to the oven. Cook for 3 hours until the beef is very tender.
