Ingredients
– 1 cup gigante beans
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 teaspoon dried oregano
– 1 lemon, juiced
– 400 ml vegetable broth
– 1 cup cherry tomatoes, halved
– Salt and pepper to taste
– Fresh parsley, chopped
Method
1. Soak the gigante beans overnight in plenty of water.
2. Drain the beans and place them in a pot with fresh water.
3. Bring the beans to a boil. Reduce the heat and simmer for about 1 hour or until tender.
4. In a separate pan, heat olive oil. Sauté the chopped onion and garlic for about 5 minutes.
5. Add the cooked beans, oregano, lemon juice, broth, cherry tomatoes, salt, and pepper. Cook for 10 more minutes and stir gently.
