Ingredients
– 125 ml unsalted butter, softened
– 1 cup brown sugar, packed
– 1 large egg
– 1/4 cup molasses
– 2 cups all-purpose flour
– 1 tsp baking soda
– 1 tsp ground cinnamon
– 1 tsp ground ginger
– 1/2 tsp salt
– 1/2 cup sugar, for rolling
Method
1. Preheat the oven to 180°C. Line a baking tray with parchment paper.
2. In a bowl, cream together the softened butter and brown sugar until fluffy.
3. Add the egg and molasses, mixing until combined.
4. Gradually stir in the flour, baking soda, cinnamon, ginger, and salt until a dough forms.
5. Roll the dough into small balls and coat each one in sugar. Place them on the baking tray and bake for 10-12 minutes until golden.
