Ingredients
– 1 cup quinoa
– 2 cups water
– 1 tsp salt
– 1 cup cherry tomatoes, halved
– 1 cucumber, diced
– 1 cup bell pepper, diced
– 1/4 cup red onion, finely chopped
– 1/4 cup fresh parsley, chopped
– 1/4 cup olive oil
– Juice of 1 lemon
Method
1. Rinse the quinoa under cold water until it runs clear.
2. In a saucepan, combine water and salt. Bring to a boil, then add quinoa.
3. Reduce heat to low, cover, and simmer for about 15 minutes, or until liquid is absorbed.
4. Once cooked, let it cool. Mix in cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
5. Drizzle olive oil and lemon juice over the salad. Toss gently to combine and serve.
