Ingredients
– 1 cup black-eyed peas
– 1 tablespoon coconut oil
– 1 onion, chopped
– 1 teaspoon mustard seeds
– 1-2 green chilies, sliced
– 1 cup grated coconut
– 1 teaspoon salt
– 1 teaspoon turmeric powder
– 2 cups water
– 1 tablespoon coriander leaves, chopped
Method
1. Soak the black-eyed peas in water for several hours or overnight.
2. In a pot, heat the coconut oil over medium flame. Add the mustard seeds and allow them to crackle.
3. Add the chopped onion and green chilies to the pot. Sauté until the onion becomes soft and translucent.
4. Mix in the grated coconut, salt, turmeric powder, and soaked black-eyed peas. Stir well and add water.
5. Cover the pot, reduce the heat, and let it simmer until the peas are tender. Garnish with coriander leaves before serving.
