Ingredients
1 cup of rice
1 cup of grated coconut
1 tablespoon of jaggery
1 teaspoon of cardamom powder
1/2 teaspoon of salt
1/4 teaspoon of turmeric powder
1 tablespoon of ghee
2 cups of water
1/2 teaspoon of mustard seeds
1/2 cup of chopped coriander
Method
1. Rinse the rice under cold water until it runs clear, then soak it in 2 cups of water for about 30 minutes.
2. Drain the rice and mix it with grated coconut, jaggery, cardamom powder, salt, and turmeric powder in a bowl.
3. Heat ghee in a pan and add mustard seeds. Allow them to crackle before adding the rice mixture.
4. Cook it on low heat, stirring occasionally for about 15 minutes, or until the rice is tender and cooked through.
5. Garnish with chopped coriander before serving.
