Old-Fashioned Potato Candy
Ingredients
1 medium-sized potato
250 g icing sugar
1/2 tsp vanilla extract
1 cup peanut butter
1 cup crushed nuts (optional)
1/4 tsp salt
1 cup coconut (optional)
Food coloring (optional)
Method
1. Boil the potato until soft. Once cooked, peel it and mash until smooth.
2. Combine the mashed potato, icing sugar, vanilla extract, and salt in a bowl. Mix until well blended and smooth.
3. Spread the peanut butter evenly over the mixture. If using, add crushed nuts and coconut on top.
4. Roll the mixture into logs, then slice into bite-sized pieces.
5. If desired, add food coloring for a fun look before serving.
