Ingredients
400g penne pasta
2 tablespoons olive oil
1 onion, chopped
2 cloves garlic, minced
1 carrot, diced
1 zucchini, diced
400g canned diced tomatoes
1 teaspoon dried oregano
Salt and pepper to taste
Grated cheese for serving
Method
Cook the penne pasta according to package instructions until al dente.
While the pasta cooks, heat olive oil in a large skillet over medium heat.
Add onion and sauté until soft. Stir in garlic, carrot, and zucchini, cooking for a few minutes until tender.
Pour in the canned tomatoes and sprinkle with dried oregano. Season with salt and pepper, then let it simmer for about 5 minutes.
Combine the cooked pasta with the sauce in the skillet, mixing well. Serve hot with grated cheese on top.
