Ingredients
1 cup rice vermicelli noodles
1 cup shredded carrots
1 cup thinly sliced bell peppers
1 cup sliced cucumber
1 cup shredded cabbage
1 cup fresh mint leaves
1 cup cooked prawns or tofu
1 tablespoon soy sauce
1 package rice paper wrappers
Lime wedges for serving
Method
1. Cook the rice vermicelli noodles according to package instructions. Drain and set aside.
2. In a large bowl, combine the shredded carrots, bell peppers, cucumber, cabbage, and mint leaves.
3. Add the cooked prawns or tofu to the vegetable mixture and drizzle in the soy sauce. Toss everything together until well mixed.
4. Fill a shallow dish with warm water. Dip each rice paper wrapper into the water for a few seconds until soft.
5. Place a small amount of the filling on the wrapper, fold in the sides, and roll it up tightly. Serve with lime wedges on the side.
