Ingredients
600 g sweet potatoes
300 ml heavy cream
100 g sugar
4 large egg yolks
1 teaspoon vanilla extract
1/2 teaspoon salt
Sugar for caramelizing
Method
1. Preheat your oven to 160°C.
2. Peel and chop the sweet potatoes. Boil them in water until soft, then drain.
3. In a mixing bowl, mash the sweet potatoes. Add cream, sugar, egg yolks, vanilla extract, and salt. Mix until smooth.
4. Pour the sweet potato mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
5. Bake for about 40 minutes or until set. Once cool, sprinkle sugar on top and use a kitchen torch to caramelize it until golden brown.
