Ingredients

– 250g chorizo sausage, sliced
– 200g mushrooms, sliced
– 300g pasta (any type)
– 1 onion, chopped
– 3 cloves garlic, minced
– 400ml diced tomatoes (canned)
– 2 tablespoons olive oil
– 1 teaspoon dried oregano
– 1/4 teaspoon chili flakes (optional)
– Fresh parsley, chopped (for garnish)

Method

1. Begin by boiling water in a large pot. Add a pinch of salt and cook the pasta according to package instructions.
2. While the pasta cooks, heat olive oil in a frying pan over medium heat. Add the chorizo and sauté until browned.
3. Stir in the chopped onion and minced garlic. Cook for a few minutes until the onion is soft.
4. Add sliced mushrooms to the pan and continue cooking until they are tender. Pour in the diced tomatoes along with oregano and chili flakes. Let it simmer for about 5 minutes.
5. Drain the pasta once ready. Combine it with the chorizo mixture. Mix well, then serve it hot, garnished with fresh parsley.
