Carrot Poriyal Recipe

Ingredients
– 4 medium carrots, grated
– 1 tablespoon oil
– 1 teaspoon mustard seeds
– 1 teaspoon urad dal (split black gram)
– 1 green chili, chopped
– 2 tablespoons fresh grated coconut
– 1/4 teaspoon turmeric powder
– Salt, to taste
– 1 tablespoon lemon juice
– Fresh coriander leaves, for garnish

Method
1. Heat the oil in a large pan over medium heat. Add mustard seeds and allow them to pop.
2. Include urad dal and chopped green chili to the pan. Sauté until the dal turns golden brown.
3. Stir in the grated carrots along with turmeric powder and salt. Mix well and cook for about 5 minutes.
4. Add the coconut and lemon juice. Stir to combine and let it cook for an additional 2 minutes.
5. Garnish with fresh coriander leaves before serving.
