Ingredients

500g chicken breast
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
Salt to taste
Pepper to taste
400g canned diced tomatoes
1 cup vegetable broth
1 cup uncooked rice
1 cup frozen peas

Method

1. Start by cutting the chicken breast into bite-sized pieces.
2. Heat olive oil in a large pot over medium heat. Add the chicken and sprinkle with garlic powder, paprika, salt, and pepper. Cook until the chicken is browned.
3. Stir in the canned diced tomatoes and vegetable broth. Bring the mixture to a boil.
4. Mix in the uncooked rice. Cover the pot and reduce the heat to low. Simmer for about 20 minutes or until the rice is cooked.
5. Finally, add the frozen peas and stir. Cook for another 5 minutes until the peas are heated through.
