One-Pot Pasta with Tomato and Spinach
Ingredients
400 g penne pasta
1 tbsp olive oil
1 onion, chopped
2 cloves garlic, minced
800 g diced tomatoes
300 ml vegetable broth
150 g fresh spinach
1 tsp dried oregano
Salt to taste
Black pepper to taste
Method
1. Start by heating olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic. Cook for about 3 minutes until softened.
3. Stir in the diced tomatoes and vegetable broth. Bring the mixture to a boil.
4. Once boiling, add the penne pasta and season with oregano, salt, and black pepper. Reduce the heat and cover.
5. Cook for around 12 minutes, stirring occasionally until pasta is tender. Mix in the fresh spinach and serve hot.
