Ingredients
2 cups all-purpose flour
1/4 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup coconut oil, melted
1/2 cup almond milk
1 tbsp freshly grated ginger
1 tbsp lemon zest
1 tbsp lemon juice
Method
Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Line a baking sheet with parchment paper.
Combine flour, sugar, baking powder, baking soda, and salt in a large bowl. Mix well.
Add melted coconut oil, almond milk, grated ginger, lemon zest, and lemon juice. Stir until the ingredients form a dough.
Turn the dough onto a floured surface. Knead it gently for about 1 minute. Shape the dough into a round about 2.5 cm thick.
Cut the dough into wedges. Place each wedge on the baking sheet and bake for 15-20 minutes until golden.
