Method
Start by cooking the quinoa according to package instructions.
While the quinoa is cooking, prepare the vegetables by chopping the onion, cucumber, and tomatoes.
Once the quinoa is done, let it cool for a few minutes before combining it with the vegetables in a large bowl.
Drizzle the olive oil and lemon juice over the mix.
Season with salt and pepper, then stir everything until well combined.
