Ingredients
- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 teaspoon Italian seasoning
- 4 cups chicken broth
- 250 g tortellini (fresh or frozen)
- 1 cup cream
- 1 cup spinach, chopped
- Salt and pepper, to taste
Method
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and cook for about 3 minutes until soft. Stir in the minced garlic and Italian seasoning, cooking for another minute.
- Pour in the chicken broth and bring the mixture to a boil.
- Add the tortellini and cooked chicken, and simmer for 5 to 7 minutes until the tortellini is cooked.
- Stir in the cream and spinach, then season with salt and pepper as needed. Cook for another 2 minutes until heated through.
