Ingredients
– 2 cups cooked turkey, shredded
– 1 cup cooked rice
– 1 cup black beans, drained and rinsed
– 1 cup corn kernels, frozen or canned
– 1 cup salsa
– 1 tsp ground cumin
– 1 cup grated cheese
– 8 small tortillas
– 1 cup sour cream
– Fresh coriander, for garnish
Method
1. Preheat your oven to 180 degrees Celsius.
2. In a large bowl, mix together the turkey, rice, black beans, corn, salsa, and cumin until everything is combined.
3. Spoon some of the mixture into each tortilla and roll them up tightly.
4. Place the rolled tortillas seam-side down in a baking dish. Sprinkle cheese over the top.
5. Bake for 20 minutes or until the cheese is melted and bubbling. Serve with sour cream and garnish with coriander.
