Ingredients
– 250g pasta of choice
– 2 tablespoons olive oil
– 2 cups sliced mushrooms
– 3 cloves garlic, minced
– 300ml heavy cream
– 1 cup vegetable broth
– 1 teaspoon dried thyme
– Salt, to taste
– Pepper, to taste
– ½ cup grated parmesan cheese
Method
1. Cook the pasta according to package instructions until al dente. Drain and set aside.
2. In a large pan, heat olive oil over medium heat. Add sliced mushrooms and cook for about 5 minutes until they turn golden brown.
3. Stir in minced garlic and cook for an additional minute until fragrant.
4. Pour in heavy cream and vegetable broth. Add dried thyme, salt, and pepper. Let the mixture simmer for about 3-4 minutes.
5. Combine the cooked pasta with the sauce. Stir in grated parmesan cheese until creamy. Serve immediately.
