Ingredients

– 500g mushrooms, sliced
– 1 teaspoon olive oil
– 1 teaspoon cumin
– 1 teaspoon smoked paprika
– 1 small red onion, diced
– 2 cloves garlic, minced
– 1 cup corn
– 8 small tortillas
– 1 avocado, diced
– Fresh cilantro, for garnish

Method

1. Heat olive oil in a large pan over medium heat.
2. Add onion and garlic, cooking until softened for about 3 minutes.
3. Stir in mushrooms, corn, cumin, and smoked paprika. Cook until mushrooms are tender, around 5 to 7 minutes.
