Dubu Salad (Korean Tofu Salad)
Ingredients
400 g firm tofu
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1 cup spinach leaves, chopped
1 avocado, sliced
1/4 cup green onions, chopped
2 tbsp soy sauce
1 tbsp sesame oil
1 tsp sesame seeds
1 tsp lemon juice
Method
Drain the tofu and slice it into cubes.
In a large bowl, combine the cucumber, cherry tomatoes, spinach, and avocado.
Add the cubed tofu into the bowl gently.
Mix soy sauce, sesame oil, sesame seeds, and lemon juice in a small bowl.
Pour the dressing over the salad and toss everything together until well combined.
