Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 500 g chicken breast, diced
– 1 teaspoon dried thyme
– 1 litre chicken broth
– 400 g gnocchi
– 2 cups baby spinach
– 300 ml cream
– Salt and pepper to taste
Method
1. Heat olive oil in a pot over medium heat.
2. Add onion and garlic; cook until the onion softens.
3. Stir in chicken pieces and thyme; cook until the chicken is no longer pink.
4. Pour in the chicken broth and bring to a boil. Add gnocchi and cook until they are tender.
5. Mix in spinach and cream; season with salt and pepper before serving.
