Ingredients

– 2 large egg whites
– 1 cup granulated sugar
– 1/4 teaspoon cream of tartar
– 1/2 teaspoon vanilla extract
– 1/2 teaspoon peppermint extract
– Red food coloring
– 1/4 cup crushed peppermint candy
– Parchment paper
– Baking tray
– Royal icing (for decoration)

Method

1. Preheat your oven to 95°C. Line a baking tray with parchment paper.
2. In a large bowl, whisk the egg whites until fluffy. Slowly add sugar while continuing to whisk until soft peaks form.
3. Add cream of tartar, vanilla, and peppermint extract. Beat the mixture until it is thick and glossy.
4. Divide the mixture into two bowls. Color one half with red food coloring to create a striped effect. Use a piping bag to pipe out candy canes onto the parchment paper.
5. Sprinkle crushed peppermint on top. Bake for 1.5 hours until dry. Let cool, then use royal icing for any extra decoration.
