Ingredients
– 1 cup crushed biscuits
– 75 g melted butter
– 500 g cream cheese
– 1 cup pumpkin puree
– 1 cup brown sugar
– 1/2 cup sour cream
– 2 eggs
– 1/4 cup bourbon
– 1 tsp vanilla extract
– 1 tsp cinnamon
Method
1. Preheat the oven to 175 degrees C. Grease a cheesecake pan and set aside.
2. In a bowl, mix the crushed biscuits with melted butter until well combined. Press this mixture into the bottom of the prepared pan to create the crust.
3. Beat the cream cheese in a large bowl until smooth. Then add the pumpkin puree, brown sugar, sour cream, eggs, bourbon, vanilla extract, and cinnamon. Mix thoroughly until all ingredients are well blended.
4. Pour the cheesecake filling over the crust and spread it evenly.
5. Bake for about 50 minutes or until the center is set. Turn off the oven and let the cheesecake cool in the oven for an hour. Refrigerate for at least 4 hours before serving.
