Ingredients
– 250 ml orzo pasta
– 500 ml water
– 200 g sun-dried tomatoes, chopped
– 150 g feta cheese, crumbled
– 1 small red onion, diced
– 50 g black olives, sliced
– 1 tablespoon olive oil
– 1 tablespoon red wine vinegar
– Salt, to taste
– Pepper, to taste
Method
1. Start by bringing the water to a boil in a pot. Add the orzo pasta and cook for about 8-10 minutes until it is al dente.
2. Drain the pasta and rinse it under cold water to stop the cooking process.
3. In a large bowl, combine the chopped sun-dried tomatoes, diced red onion, and sliced black olives.
4. Add the cooked orzo and gently mix in the crumbled feta cheese.
5. Drizzle with olive oil and red wine vinegar. Season with salt and pepper to taste, and toss everything together.
