Ingredients
– 1 cup quinoa
– 2 cups water
– 1 cup red bell pepper, diced
– 1 cup cucumber, diced
– 1 cup carrots, grated
– 1/2 cup red onion, finely chopped
– 1/4 cup fresh cilantro, chopped
– 1/4 cup lime juice
– 2 tablespoons olive oil
– Salt to taste
Method
1. Rinse the quinoa under cold water. Combine it with water in a pot.
2. Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes until the quinoa is fluffy.
3. Let it cool completely before mixing with the other ingredients.
4. In a large bowl, add chopped bell pepper, cucumber, carrots, red onion, and cilantro.
5. Drizzle lime juice and olive oil over the salad. Season with salt and toss everything together.
