Ingredients

– 400 g firm tofu
– 2 tablespoons soy sauce
– 1 tablespoon olive oil
– 1 teaspoon garlic powder
– 1 teaspoon ginger powder
– 1 cup quinoa
– 2 cups water
– 2 cups mixed vegetables (such as broccoli, carrots, and bell peppers)
– 1 avocado
– 2 tablespoons sesame seeds

Method

1. Begin by pressing the tofu to remove excess moisture. Cut it into bite-sized cubes.
2. Toss the tofu cubes with soy sauce, olive oil, garlic powder, and ginger powder in a bowl.
3. Cook quinoa by placing it in a saucepan with water. Bring to a boil, then cover and simmer for about 15 minutes until fluffy.
4. While quinoa cooks, heat a non-stick pan over medium heat. Add the marinated tofu and sauté until golden brown.
5. Steam or stir-fry mixed vegetables until tender. Serve the tofu and veggies over the quinoa. Top with slices of avocado and sprinkle sesame seeds on top.
