Ingredients
– 9 lasagna noodles
– 300 g ricotta cheese
– 2 cups vegetables (like zucchini, spinach, and mushrooms)
– 2 cups tomato sauce
– 2 cups shredded cheese (like mozzarella)
– 1 egg
– 1 teaspoon dried oregano
– 1 teaspoon garlic powder
– Salt to taste
– Pepper to taste
Method
1. Preheat the oven to 180°C.
2. Cook the lasagna noodles according to the package instructions. Drain them and set aside.
3. In a bowl, mix together ricotta, egg, oregano, garlic powder, salt, and pepper. Stir until it is well combined.
4. In a baking dish, layer some tomato sauce, followed by noodles, the ricotta mixture, vegetables, and shredded cheese. Repeat until all ingredients are used, finishing with a layer of sauce and cheese.
5. Cover the dish with foil and bake for 30 minutes. Remove the foil and bake for another 10 minutes until cheese is golden.
