Delicious Kathirikkai Pitla: A Flavorful Brinjal Recipe

Ingredients
2 cups of brinjal (eggplant), chopped
1 onion, finely chopped
2 tablespoons of oil
1 teaspoon of mustard seeds
1 teaspoon of lentils
1 teaspoon of turmeric powder
1 teaspoon of chili powder
1 teaspoon of salt
2 cups of water
2 tablespoons of fresh coriander, chopped

Method
Heat oil in a pan over medium heat. Add mustard seeds and let them pop for a few seconds. Mix in lentils, chopped onion, and sauté until golden brown. Stir in chopped brinjal, turmeric powder, chili powder, and salt. Pour in water, cover the pan, and let the mixture simmer for 15 minutes. Finally, sprinkle fresh coriander on top before serving.
