Ingredients
700 g sweet potatoes
¼ cup milk
¼ cup brown sugar
2 eggs
1 tsp vanilla extract
½ tsp cinnamon
½ tsp nutmeg
1 cup chopped pecans
1 tbsp butter
½ cup mini marshmallows
Method
1. Preheat the oven to 180°C. Peel and chop the sweet potatoes, then boil them until soft, about 20 minutes.
2. Drain the sweet potatoes and mash them in a large bowl. Add the milk, brown sugar, eggs, vanilla, cinnamon, and nutmeg. Mix until smooth.
3. Pour the sweet potato mixture into a greased baking dish.
4. In a small bowl, combine chopped pecans with melted butter. Sprinkle this mixture evenly over the sweet potato layer.
5. Bake for 25 minutes. If desired, add mini marshmallows on top and bake for an additional 5 minutes until golden brown.
