Delicious Vegan Massaman Curry Recipe: Easy & Flavorful

Ingredients

– 2 cups coconut milk
– 1 tablespoon vegetable oil
– 1 onion, chopped
– 2 cloves garlic, minced
– 1 tablespoon ginger, minced
– 2 tablespoons Massaman curry paste
– 500 g beef or chicken, chopped
– 2 cups potatoes, diced
– 1 tablespoon fish sauce
– 1 tablespoon brown sugar

Method

1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onion, garlic, and ginger. Sauté until soft and fragrant.
3. Stir in the Massaman curry paste and cook for a few minutes.
4. Add the chopped meat and cook until browned.
5. Pour in the coconut milk, then add potatoes, fish sauce, and brown sugar. Simmer until potatoes are tender.
