Ingredients
– 4 medium sweet potatoes
– 1 can black beans (400g), drained and rinsed
– 1 red bell pepper, diced
– 1/2 red onion, finely chopped
– 1 avocado, diced
– 1/4 cup fresh cilantro, chopped
– 3 tablespoons olive oil
– 2 tablespoons lime juice
– 1 teaspoon ground cumin
– Salt and pepper to taste
Method
1. Preheat the oven to 200°C. Peel the sweet potatoes, chop them into cubes, and place on a baking tray.
2. Drizzle the sweet potato cubes with olive oil, cumin, salt, and pepper. Toss well to coat. Roast for 25-30 minutes until tender, stirring halfway through.
3. While the sweet potatoes bake, prepare the other ingredients. In a large bowl, combine the black beans, red bell pepper, red onion, avocado, and cilantro.
4. Once the sweet potatoes are done, let them cool for a few minutes before adding them to the bowl with the other ingredients.
5. In a small bowl, whisk together lime juice and a little extra olive oil. Pour this dressing over the salad and toss gently to combine.
