Ingredients
– 2 cups roasted red peppers
– 2 cups diced tomatoes
– 1 medium onion, chopped
– 3 garlic cloves, minced
– 1 cup vegetable broth
– 1 cup cream

– Pepper, to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until softened, about 5 minutes.
3. Stir in minced garlic and dried basil, cooking for 1 minute more.
4. Pour in roasted red peppers, diced tomatoes, and vegetable broth. Bring the mixture to a boil.
5. Reduce heat and simmer for 15 minutes. Blend until smooth and stir in cream. Season with salt and pepper before serving.
