Ingredients
– 1 cup unsalted butter, softened
– ½ cup powdered sugar
– 1 teaspoon vanilla extract
– 2 cups all-purpose flour
– 1 cup chopped pistachios
– 1 cup dried cranberries, chopped

– Extra powdered sugar for dusting
Method
1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit) and line a baking tray with parchment paper.
2. In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
3. Mix in the vanilla extract, then gradually add the flour, salt, chopped pistachios, and cranberries. Stir until well combined.
4. Roll the dough into small balls, about 2.5 cm in diameter, and place them on the prepared baking tray.
5. Bake for 12-15 minutes until the edges are lightly golden. Allow cooling slightly, then dust with extra powdered sugar.
