Ingredients
– 3 large red bell peppers
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1 teaspoon black pepper
– 1 tablespoon balsamic vinegar
– 1 tablespoon sugar
– 1 clove garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon fresh parsley
Method
1. Preheat the oven to 220°C (428°F).
2. Wash the bell peppers and place them on a baking tray.
3. Drizzle the olive oil over the peppers and sprinkle salt and black pepper.
4. Roast in the oven for about 25-30 minutes until the skin is charred and blistered.
5. Once done, remove the peppers, let them cool, then peel off the skin. Cut into strips, and toss with balsamic vinegar, sugar, garlic, oregano, and parsley.
