Ingredients
– 1 medium cauliflower, cut into florets
– 2 tablespoons olive oil
– 1 teaspoon ground cumin
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons tahini
– 2 tablespoons lemon juice
– 2 cloves garlic, minced
– 1/4 cup water
– Fresh parsley, for garnish
Method
1. Preheat your oven to 200°C (400°F).
2. Toss cauliflower florets with olive oil, cumin, salt, and black pepper. Spread the mixture on a baking sheet.
3. Roast the cauliflower for about 25 minutes until golden and tender. Check for browning.
4. Transfer the cooked cauliflower to a blender. Add tahini, lemon juice, garlic, and water. Blend until smooth.
5. Serve the hummus in a bowl and sprinkle with fresh parsley.
