Ingredients
– 500 ml of peach yogurt
– 500 ml of whipping cream
– 200 g of raspberries
– 100 g of sugar
– 10 g of gelatin powder
– 50 ml of cold water
– 200 g of digestive biscuits
– 100 g of unsalted butter
– 2 peaches sliced
– Fresh mint leaves for garnish
Method
1. Start by crushing the digestive biscuits and mixing them with melted butter in a bowl.
2. Press the biscuit mixture firmly into the bottom of a cake pan to form a base.
3. In a separate bowl, dissolve the gelatin in cold water and let it sit for about 5 minutes.
4. Heat the peach yogurt with sugar in a pot until warm, then add the gelatin mixture. Stir until it is fully dissolved.
5. Whip the cream and gently fold it into the yogurt mixture. Pour the mixture over the biscuit base, decorate with peach slices and raspberries, then chill for at least 4 hours until set.
