Delicious Thouthe Kodel: Mangalore Cucumber Curry Recipe

Ingredients

1 small Mangalore cucumber (about 400 g), peeled and diced
1 tablespoon oil
½ teaspoon mustard seeds
½ teaspoon urad dal (split black gram)
1 green chili, slit
5 curry leaves
½ teaspoon turmeric powder
1 cup grated fresh coconut
salt, to taste
2 cups water

Method

1. Heat oil in a pot over medium heat. Add mustard seeds and wait for them to splutter.
2. Mix in urad dal, green chili, and curry leaves. Sauté for a minute until fragrant.
3. Add turmeric powder and diced cucumber. Stir everything together for about 2 minutes.
4. Pour in water and season with salt. Allow it to cook until the cucumber becomes tender, about 10 minutes.
5. Finally, mix in grated coconut. Cook for another 2 minutes before removing from heat.
