Ingredients
200 g ladies’ fingers (okra), chopped
1 medium onion, finely chopped
2 medium tomatoes, chopped
1 teaspoon mustard seeds
1 teaspoon turmeric powder
1 teaspoon red chili powder
1 tablespoon tamarind paste
500 ml water
Salt, to taste
Fresh coriander leaves, for garnish
Method
Heat some oil in a pot over medium heat.
Add mustard seeds and wait until they pop.
Stir in chopped onions and cook until soft and golden.
Add chopped tomatoes, turmeric powder, red chili powder, and salt. Cook until tomatoes break down.
Mix in ladies’ fingers, tamarind paste, and water. Bring it to a boil and simmer for 10 minutes.
