Easy Chicken Stir-Fry Recipe
Ingredients
500g chicken breast, diced
2 cups mixed frozen vegetables
2 tablespoons soy sauce
1 tablespoon olive oil
1 teaspoon garlic, minced
1 teaspoon ginger, minced
2 cups cooked rice
1 tablespoon cornflour
100ml water
Salt and pepper to taste
Method
1. Heat olive oil in a large pan over medium heat. Add minced garlic and ginger, cooking for about 1 minute until fragrant.
2. Add the diced chicken to the pan. Cook for 5-7 minutes until the chicken is browned and cooked through.
3. Stir in the mixed vegetables and soy sauce. Cook for another 4-5 minutes, stirring occasionally.
4. Mix cornflour with water in a small bowl and pour it into the pan. Stir well to combine. Cook for an additional 2-3 minutes, allowing the sauce to thicken.
5. Serve the stir-fry over cooked rice. Season with salt and pepper according to your taste.
