Ingredients
– 4 duck breasts
– 500 ml duck fat
– 600 g small potatoes
– 2 tsp smoked paprika
– 2 tsp salt
– 1 tsp black pepper
– 1 tbsp vegetable oil
– Optional: fresh herbs for garnish
Method
1. Start by preheating your oven to 200°C.
2. Cut small potatoes in half and place them in a pot. Cover them with water and add salt. Bring to a boil. Cook until tender for about 10 minutes.
3. Drain the potatoes and dry them thoroughly. Heat duck fat in a large oven-safe skillet over medium-high heat.
4. Once the fat is hot, add the potatoes. Season with smoked paprika, black pepper, and more salt. Cook until they are golden brown, then transfer the skillet to the oven.
5. Score the skin of each duck breast, then season with salt and pepper. In another skillet, heat vegetable oil over medium-high heat. Cook the duck breasts skin-side down for 6-8 minutes until crispy. Flip and cook the other side for another 4-5 minutes. Serve alongside the potatoes.
