Ingredients
– 300 g pasta (penne or fusilli)
– 1 tablespoon olive oil
– 1 small onion, diced
– 2 cloves garlic, minced
– 1 bell pepper, chopped
– 400 g canned diced tomatoes
– 1 teaspoon Italian herb mix
– 1 cup shredded cheese
– Salt and pepper to taste
– Fresh basil for garnish (optional)
Method
1. Cook the pasta according to package instructions. Drain and set aside.
2. Heat olive oil in a large frying pan over medium heat. Add the onion and cook until soft.
3. Stir in the garlic and bell pepper. Cook for about 3 minutes until everything is tender.
4. Add the canned tomatoes and herb mix. Season with salt and pepper. Let it simmer for 5 minutes.
5. Combine the cooked pasta with the tomato mixture. Mix in the cheese, then serve hot.
