Ingredients

– 1 cup quinoa

Method

1. Rinse the quinoa under cold water in a fine mesh strainer.
2. Combine rinsed quinoa and water in a pot. Bring to a boil, then reduce heat. Cover and simmer for 15 minutes or until water is absorbed.
3. Let the quinoa cool for a few minutes, then fluff it with a fork.
4. In a large bowl, mix cooled quinoa, cherry tomatoes, cucumber, bell pepper, corn, and feta cheese.
5. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss everything together and serve.
