Ingredients
– 450 g Italian sausage
– 1 large onion, diced
– 3 cloves garlic, minced
– 1 litre chicken broth
– 500 ml potatoes, diced
– 240 ml heavy cream
– 2 cups kale, chopped
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1/4 teaspoon red pepper flakes
Method
1. In a large pot, cook the Italian sausage over medium heat until brown. Break it into small pieces while cooking.
2. Add the diced onion and minced garlic. Sauté for about 3 minutes until the onion is soft.
3. Pour in the chicken broth and add the diced potatoes. Bring everything to a boil and then reduce the heat. Simmer until the potatoes are tender, which takes about 15 minutes.
4. Stir in the heavy cream and chopped kale. Let the mixture cook for another 5 minutes while seasoning with salt, black pepper, and red pepper flakes.
5. Taste the soup and adjust the seasoning if needed. Serve hot and enjoy.
