Ingredients
– 200 g plain biscuits (crushed)
– 100 g unsalted butter (melted)
– 450 g cream cheese (softened)
– 1 cup caster sugar
– 1 tsp vanilla extract
– 3 large eggs
– 250 ml sour cream
– 500 g cherry pie filling
– Fresh cherries (for garnish, optional)
Method
1. Preheat the oven to 175°C (350°F). Prepare a 23 cm springform pan by greasing it lightly.
2. Combine the crushed biscuits and melted butter in a bowl. Press this mixture firmly into the bottom of the pan to form the base.
3. In a separate bowl, beat the cream cheese until smooth. Mix in the sugar and vanilla extract until blended. Add the eggs one at a time, beating after each addition. Then stir in the sour cream.
4. Pour the cream cheese mixture over the biscuit base in the pan. Bake for about 50 minutes until the center is set but slightly wobbly.
5. Allow the cheesecake to cool. Spread the cherry pie filling on top before serving. Garnish with fresh cherries if desired.
